We use AOP (Appellation d'Origine Protégée) butter throughout our kitchen — a certified French butter held to the strictest standards of origin and craft, prized for its richness, depth, and the unmistakable character it lends to everything we bake.
It's the quiet foundation behind our flaky, golden layers and the tender crumb of our pastries.
We also churn that same quality into our house-made compound French butters, each one an invitation to taste something a little unexpected.
